oven roasted corn with chili lime butter

It’s sweet corn season in northeast Ohio. To celebrate we roasted up a batch on Sunday night with our barbecue chicken. I found a recipe for roasted corn with chili lime butter on the Food Network web site. I knew that it would be great since it was from one of my favorite celebri-chefs Tyler Florence. The twist was that he roasted the corn in their husks in the oven. And I gotta say, it was great to set the oven and not have to think about the corn for 35 minutes. The addition of the very simple-to-make chili lime butter took the sweet corn to a whole new level. A final squeeze of fresh lime wedge…divine. Look out local corn growers, I’m going to be feasting on this stuff for the rest of the summer.

Side note, the grilled chicken with homemade barbecue sauce…amazing.
