peach buckle – everyday food challenge

Rustic and elegant. That’s how I’d describe this incredible Peach Buckle from issue #14 of Everyday Food Magazine.

Can I be honest for a moment? I’ve been feeling like last week’s challenge was kind of a cop-out. I mean really, yogurt cheese? All I did was strain some yogurt over night. I hope that this amazing dessert makes up for that post.

First, it’s the perfect time of year to be using the sensationally seasonal peach. I have to say, this recipe made for a divinely moist cake. And the crunchy, cinnamon-sugar-almond topping was perfect. The magazine indicates that you can use a square baking pan, but if you have a cast-iron skillet, you should use it. It makes the presentation of the final product that much more special. I have a feeling that this is the first of many buckles to come.

Be sure to check back on Thursday for a bonus recipe from this great issue of Everyday Food. It’s a perfect party spread.

Oh my gosh, I’d kill for a piece of this right now for breakfast! Well, maybe not kill, but I’d push people out of the way for sure! And I have just the cast iron skillet to make this in, too. Beautiful!

Oh boy does that look delicious! Anything with peaches gets added to my recipe list:) Did you like it better warm or cold?

Warm was incredible, but cold for breakfast the next morning was just as delightful.

I found your blog by way of Twitter, and I love the Everyday Food challenge! It’s one of my favorite magazines (I am so obsessed that I’ve been slowly filling the holes in my almost complete collection with eBay purchases of back-issues). Can’t wait to see what else you’ll make!

Hi Laura. Thanks for stopping by my little spot on the web. I checked out your blog, I had the same feeling about Real Simple recipes, but occasionally you can come across a good one. That fettuccine looked delightful!

This is perfect! I’ve been looking to use my sliced almonds and have some fresh peaches ready to go. Looks like a keeper recipe for this peach lover!
